GREEK STYLE PASTA SALAD Inspired By: Greek Pasta Salad featured on www.fatfree.com
Ingredients:
1 pound spinach fettuccini 1/2 cup vegetarian mock chicken broth 1 T balsamic vinegar 1 T white wine vinegar 1 - 2 PureSpice ® garlic, minced 3 cloves garlic, oven roasted 1 t PureSpice ® dried basil 1 t PureSpice ® dried oregano 4 oz. feta cheese 8 oz. spinach, washed, dried and chopped 1 cucumber, peeled and chopped 1/2 small red onion, sliced in very thin rounds PureSpice ® Fresh cracked black pepper, to taste PureSpice ® salt-free seasoning, to taste 10 cherry tomatoes, quartered
1. Cook the fettuccine according to package directions, until al dente. Meanwhile, in a small bowl, mix the broth, vinegar, garlic, basil and oregano. 2. Drain the fettuccine, place it in a large bowl; add the broth mix, feta, spinach, cukes and onions. Toss well. Season, to taste, with the salt and pepper. 3. Add the tomatoes and toss gently. Chill until ready to serve (the flavors improve over time). Serve at room temp.
