POPPY SEEDS CHICKEN CURRIED IN SPICY TOMATO SAUCE Inspired By: Chicken Curried in Spicy Tomato Sauce from “The Complete Low-Fat Cookbook” Ingredients: 1 Tbsp oil 3 lb jointed chickens 1 onion sliced ½ tsp PureSpice ® ground cloves 1 tsp PureSpice ® ground turmeric 2 tsp PureSpice ® garam masala 3 tsp PureSpice ® chilli powder 3 cloves garlic 1 Tbsp finely chopped fresh ginger 1 Tbsp PureSpice ® POPPY SEEDS 2 tsp PureSpice ® fennel seeds 1 cup light coconut milk 1 PureSpice ® star anise 1 PureSpice ® cinnamon stick 4 large tomatoes, roughly chopped 2 Tbsp limejuice 13. Heat oil in large frying pan, add chicken in batches and cook for 5-10 minutes, then transfer for pot. 14. Add onion to frying pan and cook, stirring for 10-12 minutes. Stir in ground cloves, turmeric, garam masala, and chilli powder and cook, stirring for 1 minute, then add the chicken. 15. Place the garlic, ginger, POPPY SEEDS, fennel seeds, and coconut milk in food processor or blender and process until smooth. Add the spice mixture, star anise, cinnamon, tomato and ¼ cup water to the chicken. 16. Simmer, covered, for 45 minutes, or until the chicken is tender. Remove the chicken, cover and keep warm. Bring the cooking liquid to a boil for 20 minutes. Or until reduced by half. Mix the limejuice with the cooking liquid and pour over chicken. Serve with yogurt. |
