MEDITERRANEAN RUB MEDITERRANEAN BEEF BRISKET Inspired By: Betty Crocker’s Four Pepper Beef Brisket Ingredients: 2 cups hickory wood chips PureSpice ® MEDITERRANEAN RUB 5 lb well trimmed beef brisket ½ cup barbeque sauce 1. Cover wood chips with water; soak 30 minutes. Drain wood chips. Prepare and heat smoker using wood chips. (For charcoal smoker, use 5 pounds charcoal briquettes.) 2. Rub MEDITERRANEAN RUB into all sides of beef. 3. Brush smoker rack with vegetable oil. Cover and smoke beef about 4 hours. Brush beef with barbecue sauce; continue smoking about 1 hour longer or until meat thermometer reads 160 degrees F.
