ITALIAN SEASONING PENNE WITH RICOTTA AND BASIL SAUCE prep Time: 20 minutes Cook Time: 15 minutes Serves: 4 Ingredients: 2 bacon rashers 2 tsp. Olive oil 2-3 cloves of garlic 1 onion, finely chopped 2 spring onions, finely chopped 8 oz ricotta ½ cup PureSpice ® basil leaves, finely chopped 1 tsp ITALIAN SEASONING 11 oz penne 8 cherry tomatoes, halved 1. Remove fat and rind from bacon and chop roughly. Heat oil in a pan; add the bacon, garlic, onion and spring onion and stir over medium heat for 5 minutes. Remove from heat, stir in ricotta and chopped basil and beat until smooth. 2. Meanwhile, cook pasta in boiling water for 10 minutes. Just prior to draining pasta, add about a cup of the pasta water to the ricotta mixture to thin the sauce. Add more water if you prefer an even thinner sauce. Season well. 3. Drain the pasta and stir the sauce and tomato halves in the pasta. |
