ISLAND JERK CHICKEN BREAST SALAD
Inspired By: Recipe featured on website, “Chef 2 Chef Culinary Portal”

Ingredients:

2 chicken breasts, on the bone or boneless
½ cup canola oil
3 Tbsp. PureSpice ®whole roasted cardamom
2 Tbsp. PureSpice ®ISLAND JERK seasoning
1 tsp PureSpice ®thyme
1 tsp PureSpice ®cilantro
1 tsp PureSpice ® ground pepper

1.Trim fat and slightly pound chicken breast, (if boneless). Blend all spices and herbs with oil in a bowl or holding pan. Add chicken to spice mixture. Refrigerate and marinate for at least an hour.
2. In a medium size pan on medium heat, add 2 tsp of desired oil. Let oil get almost smoking hot. Add chicken immediately.
3.Lear sear for 20-30 seconds or until golden brown. Turn over, removing all excess fat from pan. Put in a 375 degree oven for 8 minutes if boneless and 15-18 minutes if bone in. When done, remove from pan and let sit for 5 minutes.
4.Peel off skin and slice thin slices in the chicken with a knife and serve over greens with dressing of choice.
