Ingredients:
Beef Tenderloin PureSpice ® ESPRESSO RUB 1 lb butter ¼ cup water 2 Tbsp Chipotle Sauce, canned Lobster Tails 1 ½ lemons (juice only) Apple wood chips
1.Coat tenderloin with ESPRESSO RUB. 2.Prepare stovetop smoker with apple wood chips. Add tenderloin and cook until internal temperature is 140 degrees…usually about 12-15 minutes. 3.Boil water, whisk in butter over low heat until it melts in the water. 4.Add lemon juice and chipotle sauce. Add lobster tail. Allow tail to continue cooking. 5.Slice the tenderloin. 6.Add to plate and pour lemon butter sauce and lobster tail on top of the beef.
