CREAM OF CELERY SOUP Inspired By: Recipe featured on www.fabulousfoods.com
Ingredients:
1 small bunch of celery, with leaves, finely chopped 1 Tbsp butter 1 onion, chopped 4 ½ cups chicken or vegetable stock 1 ½ cups heavy cream Pinch PureSpice ® salt Pinch PureSpice ® celery salt Pinch PureSpice ® pepper Pinch PureSpice ® ground celery seed
1.Heat butter in small soup pot. Add onion and stir over medium heat until softened. Add celery and cook over low heat, stirring frequently, until celery is softened but not brown. 2.Add stock, cover, and simmer for about 20 minutes, or until celery is tender. 3.Puree the soup until smooth in a food processor or blender, working in small batches. 4.Return pureed soup to pot and stir in cream. Season to taste with salt, celery salt, pepper and ground celery seed. Stir soup over medium heat until heated through. Serve right away, garnishing with chopped celery leaves.
