PENNE WITH RICOTTA AND BASIL SAUCE Inspired By: Penne with Ricotta and Basil Sauce from “The Complete Lowfat Cook Book” Ingredients: 2 bacon rashers 2 tsp. Olive oil 2-3 cloves of garlic 1 onion, finely chopped 2 spring onions, finely chopped 8 oz ricotta ½ cup PureSpice ® basil leaves, finely chopped 11 oz penne 8 cherry tomatoes, halved 1. Remove fat and rind from bacon and chop. Heat oil in a pan, add the bacon, garlic, onion and spring onion and stir over medium heat for 5 minutes. Remove from heat, stir in ricotta and chopped basil and beat until smooth. 2. Meanwhile, cook pasta in boiling water for 10 minutes. Just prior to draining pasta, add about a cup of the pasta water to the ricotta mixture to thin the sauce. Season well. 3. Drain the pasta and stir the sauce and tomato halves in the pasta. |
